How do you make Chinese tea? The steps and methods vary by type, but some basic steps to make Chinese tea are similar.

Step 1: Hot tea sets

Pour boiling water into all tea sets and drain the teapot and teacups. This warms up the tea sets, keeps the tea soup at a steady temperature, and also cleans them.

Step 2: Put tea leaves into the teapot

The amount of tea leaves depends on the type of tea and your preference. For strong tea, add more leaves; for light tea, add fewer.

Step 3: Wash the tea leaves

Pour hot water into the teapot, wait a few seconds, and then pour out the water. This removes dust, pesticides, or other things on the tea leaves. Some teas are already washed clean during the processing and don’t need this step.

Step 4. Pour in hot water

Usually, fill the teapot with water up to 4/5 full, leaving some space for the tea leaves to spread. The brewing time is generally about 5 minutes. The longer you brew, the stronger the tea will be.

Step 5: Pour tea soup into fair cup

The tea should be poured into the warm fair cup first, shake it evenly (均匀地) and then pour into the guests’ cups. This ensures everyone gets the same taste, which is why it’s called the fair cup.

Step 6: Serve tea

When serving tea, put the tea cup on a tray and place it in front of the guest’s right hand.

Step 7: Savor tea

After the tea is served, first look at its shape and color instead of drinking right away. Then smell it before tasting.

1.1. Step 1 aims to ________. ① raise the temperature of tea sets ② keep the temperature of tea soup stable ③ show respect to the guests ④ clean the tea sets

A ①②③

B ①③④

C ②③④

D ①②④

根据Step 1: Hot tea sets中的“This warms up the tea sets, keeps the tea soup at a steady temperature, and also cleans them.”

2.2. Which of the following statements is TRUE according to the text?

A Place the tea cup in front of the left hand of your guest.

B The brewing time can affect the strength of the tea.

C It is usually advisable to fill the teapot with water.

D The first brew of any tea can’t be abandoned.

根据Step 6: Serve tea的“When serving tea, put the tea cup on a tray and place it in front of the guest’s right hand.” Pour in hot water的“Usually, fill the teapot with water up to 4/5 full”可知,建议倒入占茶壶4/5的水中,C项错误;根据Step 3: Wash the tea leaves的“Pour hot water into the teapot, wait a few seconds, and then pour out the water.”和“Some teas are already washed clean during the processing and don’t need this step.” Pour in hot water的“The longer you brew, the stronger the tea will be.”

3.3. What is the function of using a fair cup in Step 5?

A To mix the tea leaves with water thoroughly.

B To cool down the tea to a drinkable temperature.

C To ensure that each guest receives an equal taste of tea.

D To remove any remaining dust from the tea.

根据Step 5: Pour tea soup into fair cup的“The tea should be poured into the warm fair cup first, shake it evenly and then pour into the guests’ cups. This ensures everyone gets the same taste”可以推断出,将茶倒入公道杯里,然后倒入每个小茶杯中,以使茶汤浓度均匀,这样是为了确保每位饮茶者都能品尝到相同浓度和口感的茶。故选C。
