MATTE Bottega del Cioccolato opened its shop in Tokyo’s Azabudai Hills Garden Plaza in February 2024. Corteccia gets its idea from traditional Italian layered chocolate. To make it, the shop worked with a local machine expert for one and a half years and created a special rolling machine. No other machines in the world can press chocolate into such an ultra-thin sheet. Workers roll the thin chocolate into twig-like shapes (树枝状) with rough bark surfaces.
