Though the tomato fight is iconic, it’s part of a week-long festival honoring the town’s patron saint, San Luis Beltrán. The battle begins around 11 a.m., but arrive early to witness the “palo jabón”—a greasy pole with a ham atop, where climbers compete before the chaos. The official start of the fight has to wait until someone manages to climb it.
